Bacon Pierogi Bites
Serves: 4 Cooking Time: 20 min

What You’ll Need:
14 bacon slices, cut in half
1 (12-ounce) package mini potato and Cheddar
pierogies, thawed
1/4 cup light brown sugar

What To Do:
1. Preheat oven to 400 degrees F. Coat a rimmed baking sheet with cooking spray.
2. Wrap bacon around center of each pierogi and place on prepared pan. Sprinkle evenly with brown
sugar.
3. Bake 18 to 20 minutes, or until bacon is crisp.
Notes
Can be served these with sour cream!

Cold-coldcoldcold! It is currenetly +1 with a windchill of -10. Yes, that would indeedy be 10 below zero. Or in celsius -17 with a windchill of -23. The pretty blouse I had out for today is back in the closet and something much warmer is on. And I guess I need a new alarm clock, since this is day 3 of setting it at night and waking up after it should have gone off.

In much more important news-a reminder -

On the 3rd January 1892 JRR Tolkien was born in Bloemfontein, South Africa. To celebrate this event, on this day each year Tolkien fans around the world were invited to raise a glass and toast the birthday of this much loved author 21:00 (9 pm) your local time.

The toast is "The Professor".

For those unfamiliar with British toast-drinking ceremonies:
To make the Birthday Toast, you stand, raise a glass of your choice of drink (not necessarily alcoholic), and say the words 'The Professor' before taking a sip (or swig, if that's more appropriate for your drink). Sit and enjoy the rest of your drink.
