BROWN SUGAR FUDGE
Ingredients
2 cups packed brown sugar
1 cups sugar
1/2 cups light cream
1/2 cups milk
2 tbsp. corn syrup
2 tbsp. butter or margarine
1 tsp. vanilla
1/2 cups coarsely chopped nuts
Instructions
Combine brown sugar, sugar, cream, milk and corn syrup in a saucepan.
Cook over medium heat, stirring constantly until sugar is dissolved and mixture comes to a boil.
Cover and boil 1 minute; uncover.
Cook over medium heat, stirring occasionally, to sort ball stage (113ºC/236ºF).
Remove from beat and add butter and vanilla without stirring.
Cool to lukewarm (43ºC/110ºF) without stirring.
Beat vigorously with wooden spoon until mixture thickens and begins to lose its gloss.
Stir in chopped nuts and pour immediately into buttered 20 cm (8") square pan; spread with fingers.
Cut in squares.
To freeze: Place in air-tight container in freezer.
Just before serving, take the amount needed from freezer and let stand 15 minutes before serving
(Return balance immediately to freezer)
Yield: 36 squares
