ORIGEN KETCHUP
Makes 2 1/2 cups; Note: Customize this recipe to suit your taste. Sweeten it with brown sugar or honey instead of white sugar, or play with the spices, adding garlic, allspice or crushed red chiles.

2 cups tomato sauce
1/2 cup tomato paste
2 tablespoons white sugar
2 cups water
1/4 onion, pureed
1/4 cup white vinegar
1 teaspoon ground cloves
2 tablespoons salt
1 teaspoon white pepper
Pinch cayenne pepper

1. Combine tomato sauce and paste, sugar, water, onion and vinegar in a large pot. Bring to a boil. Reduce heat, add cloves, salt, pepper and cayenne, and simmer for 30 minutes or until sauce is reduced and the consistency of ketchup.

2. Adjust seasonings as needed, adding more sugar if it’s too tart and more vinegar if it is too sweet. Cool and store in refrigerator up to 3 months.
