Wheat Berry Salad with Feta, Olives, and Tomatoes
1-1/2 cups uncooked wheat berries, soaked in water overnight
1/2 tsp. salt
1 1/2 cups cherry tomatoes, halved
1/2 cup chopped, pitted kalamata olives (rinsed)
1 small red onion, chopped
2 cloves garlic, minced
6 oz chopped feta cheese
1/3 cup light balsamic vinaigrette
Drain and rinse wheat berries; place in a medium sized saucepan
and cover with several inches of water. Add the salt; bring to a
boil. Simmer, partially covered, until wheat berries are tender,
about an hour; drain completely. Allow to cool. Combine all the
other ingredients with the wheat berries and stir. Refrigerate until
served.
