Artichoke squares
3 - 6oz. Jars marinated artichoke hearts, in oil.
1 clove of garlic, crushed
1/2 cup of chopped onion
4 eggs
1/2 cup seasoned bread crumbs
1/2 lb. sharp cheddar cheese, grated
2 T minced fresh parsley
1/4 tsp. salt
1/8 tsp. dried oregano
1/8 tsp. pepper
1/8 tsp. Tabasco sauce
Drain the oil from one jar of the artichokes into a skillet, heat.
Add garlic and onion and sauté in the oil for 5 minutes and set aside. Drain the remaining artichoke and chop finely. Set aside.
Beat eggs in bowl until foamy and blend in the bread crumbs, grated cheese, parsley, salt, oregano, pepper and Tabasco.
Add the chopped artichoke hearts to the egg mixture and stir to mix well. Spoon into a greased 9X9 inch pan. Bake in a 350 degree oven for 30 minutes.
