Makes about 1 1/2 cups; good for sweet potato fries or on burgers or other sandwiches.
1/2 cup mango, peeled, chopped
1/2 cup orange juice
2 tablespoons fresh lime juice
1 teaspoon honey
1 teaspoon freshly grated orange peel
1/2 teaspoon cayenne pepper
1/2 teaspoon curry
1 cup mayonnaise
2 teaspoons finely chopped mint
Pinch of sea salt
Pinch of fresh ground pepper
1. Heat mango and orange juice in a saucepan over medium heat, stirring a bit, 3-5 minutes. Remove from heat and stir in lime juice, honey, orange peel, cayenne pepper and curry. Cool to room temperature.
2. Mix mayonnaise, mint and mango mixture in a food processor. Season with salt and black pepper.
