Sugar-Free Vegan Banana-Applespice Bread with Blueberries and Walnuts
1 1/2 bananas
1 cup applesauce with 1 1/2 teaspoons baking soda
1/2 cup fresh blueberries
1/2 cup chopped walnuts
1 cup oat flour
1 cup almond flour
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon grated nutmeg
1/4 teaspoon ground cloves
Preheat oven to 375°F and lightly spray a 5 x 9-inch loaf pan. Mash the banana in a bowl until creamy and gently stir in applesauce, blueberries, and walnuts; mix the flour, salt, and spices in a second bowl and then combine the wet and dry mixtures well. Turn into the pan and bake for about 50 minutes in the top third of the oven. Let cool in the pan for about five minutes, then transfer bread to a cooling rack. Lightly dust with shredded coconut or glaze if you're feeling adventurous and serve!
