Farmers Market Soup
1 large bell pepper, cored, seeded and cut into medium chunks
2 green and 2 yellow zucchini, trimmed, cut in half and sliced into larger pieces
2 Japanese eggplant, trimmed, peeled and cut into ½ inch thick disks
1/2 pound green beans, trimmed and cut into large sections
1 bunch bok choy, stem cut into bite sized pieces, leaves torn
1 bunch spinach, torn
6 plum tomatoes, cut into large chunks
2 ears bodacious corn, cut from cob
3 stalks celery, large chunks
4 smallish onion, cut into larger chunks
1 turnip, cut into cubes
1 rutabaga, cut into smaller cubes
2 smaller heads broccoli, cut into pieces
1/2 head cauliflowers, cut into pieces
1/2 bag baby carrots, cut in half
1 large container vegetable broth
3 cloves chopped garlic
Chili powder
Crushed red chilies
Extra water
Kluski noodles, cooked
Mix all veggies in a huge kettle, sprinkle seasonings over top, pour broth and water over all to rinse seasoning through. Cover with foil/lid and place in oven for 3-4 hours into almost done. Add noodles and mix gentle, return to oven for 20 – 30 minutes.
Serve with garlic toast or cheesy garlic toast.
We're going to be eating this for the next week. What was I thinking?????
