Curried Chicken Salad
3 cups cooked chicken breasts, cubed
Two thirds cup mayonnaise
One third cup celery, chopped
One half cup dried cranberries
One quarter cup sliced almonds
1 tsp. curry powder
Salt and pepper to taste
Combine all ingredients and mix well. Chill for several hours before serving. As a variation you may use green grapes or pineapple tidbits instead of the dried cranberries.
Chicken Salad is a great summertime meal. Serve this with a nice loaf of crusty bread or some pita bread.
The Skinny: Use skinless chicken breasts and low fat mayo.
