And the end of the three day thing. Partly transfered from last year, I've added two photos to last years mix.

So we come to the end of that strange three day thing I started on Wednesday. We started with my grandfathers birthday, then my mothers birthday and today we have the sad to offset anything else.

Sugar-Free Vegan Banana-Applespice Bread with Blueberries and Walnuts

1 1/2 bananas
1 cup applesauce with 1 1/2 teaspoons baking soda
1/2 cup fresh blueberries
1/2 cup chopped walnuts
1 cup oat flour
1 cup almond flour
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon grated nutmeg
1/4 teaspoon ground cloves

Preheat oven to 375°F and lightly spray a 5 x 9-inch loaf pan. Mash the banana in a bowl until creamy and gently stir in applesauce, blueberries, and walnuts; mix the flour, salt, and spices in a second bowl and then combine the wet and dry mixtures well. Turn into the pan and bake for about 50 minutes in the top third of the oven. Let cool in the pan for about five minutes, then transfer bread to a cooling rack. Lightly dust with shredded coconut or glaze if you're feeling adventurous and serve!

Bet we're all counting the hours until I go back to work and quit posting, aren't we.

I has new kitten photos. My how she's grown and changed in just a week.
For anyone that hasn't heard (there's someone who hasn't?), I adopted Estel last week, she's about 5 weeks old now. Will isn't her mom, she just thinks she is. And we're all in awe that Louise likes her and didn't eat her.
